This past weekend was my first experience with blueberry picking. My favorite part was the absence of thorns. After weeks of enduring the scrapes and scratches of our raspberry and blackberry bushes at home, these kind, thornless blueberry bushes were a pure delight!
Today's blog post is a round-up of the best blueberry recipes I've made in recent years, and a couple that I would like to try out this season. Please share in the comments if you have any blueberry favorites!
Blueberry Zucchini Cake with Lemon Buttercream
I've posted about this cake more than once, and there's a reason for that. ;) It is the very best summer dessert ever. Not exaggerating. Here's the link to my adaptation of the recipe.
And here's a selection of blueberry breakfast goodness...
Blueberry Rhubarb "Bran"cakes
A bit healthier (and more flavorful) than your standard buttermilk pancake. That way you can spend your calories on the maple syrup and bacon! I came up with this recipe during my two-month-long "Great Rhubarb Challenge" last summer.
Granola with Fresh Berries
For a quicker breakfast, scoop up some granola and pile on the berries (any kind! We don't have to be exclusive with the blueberries here.) Sliced banana is also quite good.
Crepes with Lemon Curd and Blueberries
If you want to get fancy, you can try out these crepes, filled with zesty lemon curd and garnished with fresh cream and berries. Don't let the French name scare you.. I promise they're not any more difficult than pancakes. :)
To Be Baked
Like a "To Be Read" list, but for bakers! Here are a few of the desserts I would like to attempt next...
Blueberry Banana Bread by Dinner at the Zoo
Blueberry Upside Down Cake by Delish
Blueberry Lemon Meringue Pie by Bon Appetit
Thank you for stopping by,
