This is the latest recipe I've tried, and I just had to share it. I adore this pumpkin spice time of year, and baking everything with pumpkin. It seemed a bit early for a full-out pie (more of Thanksgiving thing, in my opinion.) So I made a comprimise.. Still pastry and pumpkin, but hand-held, and maple-glazed. ;)
Here's the recipe from "Cooking on the Front Burner." Only thing I did differently was make my own pastry (3 C. flour, pinch salt, cut in 1 1/2 sticks cold butter, add cold water til dough comes together. Chill for at least 30 min. before rolling out. Easy as pie!!)
