Much like the Gourmet Grilled Cheese Sandwich of a few weeks ago, this recipe is a true family favorite. And it couldn't be simpler to make! Begin with a cheap, thin-crust frozen pizza and "doctor it up" with fresh garden ingredients, herbs and extra cheese. While this could be cooked in the oven, I highly recommend using the grill, which imparts a delightful, smoky sweet flavor.
This may be one of the easiest recipes I ever post. I don't tend to promote processed foods, but Friday pizza nights are an exception. Unless I can devote a full afternoon to making tomato sauce, sausage, and a yeasted dough for the crust, I'll gladly settle for a store bought pizza. After all, we deserve to kick back and relax after a long week. :)
Ingredients
Thin crust frozen pizza (cheese, pepperoni, or sausage)
Basil
Oregano
Tomatoes, diced
Onion, diced and cooked in the microwave with a Tbsp. of butter to soften
Bell or banana peppers, diced
Red pepper flakes
Cracked black pepper
Parmesan and/or mozzarella
Bacon (to create smoke in the grill)
Note: Feel free to add your family's favorite pizza toppings - mushrooms, olives, or whatever tickles your fancy!
Directions
Unwrap the frozen pizza and add all of the extra toppings, in order as listed. Putting all the other ingredients on top of the herbs prevents them from blackening.
If you haven't grilled recently, throw a couple pieces of bacon on the grill before adding the pizza to create some smoky flavor.
Cook pizza at 375 ⁰F on a steel pan or pizza stone. (Aluminum heats much too quickly.) While cooking times can vary, it should take about 25 minutes until the crust is crispy and cheese is golden brown.
